Reconnecting Diners to their Food

Jim is the founder of Outstanding in the Field, a traveling farm dinner series on a mission to “reconnect diners to the land and the origins of their food, and to honor the local farmers and food artisans who cultivate it.”

The meals are served family style and made almost entirely of local ingredients. The organization brings food outside of the restaurant for a unique dining experience, often taking place outdoors, sometimes just inches from where the ingredients used to create the meal were grown.

His other art form, temporary land art, uses natural materials to create massive drawings in sand, ice and soil. One of his projects, Lake Baikal in Siberia, is the world’s largest single artwork, with the spiral of circles growing from 18” to miles in diameter.
